Late Harvest – which means late harvest – is an important category in Tokai wine production. At Hétszőlő, grapes are primarily used on the way to the raisin stage, which has not undergone noble rot. This is to preserve the wine’s freshness and clean, clear fruit. The wine comes from the winery’s original single field Hétszőlő from 1502 when the winery’s 7 fields were originally collected by the Garai family – the first in the line of significant families to have the historic winery in their hands. The Hétszőlő vineyard has the ideal microclimate for viticulture with its south-facing sun exposure and fine location at the confluence of the rivers Tisza and Bodrog.
Although the residual sugar is as high as 57.8 g / l, it is an exceptionally balanced wine, where the sweetness is kept in check by a life-giving acid. The wine ferments in stainless steel tanks on its sediment with regular stirring (batonnage) for 10 months.
