Chant de la Terre, anchored in the heritage of Cathare, is the home of the Fabre family (Louis, Claire, and their children) and the central office for their multiple wineries. An extraordinary underground cellar favours optimum winemaking. The winery is certified organic.

They welcomes visitors to taste their vintages in the old stables which have been converted to a tasting cellar. The vineyards are situated on the rocky terraces of the Orbieu river and the windy foothills of Mount Alaric. This terroir yields concentrated and well balanced wines. The underground cellars dating back to the fourteenth century are a unique testimony to history. Each bottle from the Famille Fabre is an invitation to discover their terroir and mythical cellar.

The vineyards have a rich diversity of soils: recent alluvial soil, rolled pebble soil, and deep plots of limestone that dates back to the Miocene. They offer little fertility and high minerality. The strong Cers (North-west wind) blows down from the garrigue and infuses the wines with aromas of juniper and rosemary.

With a pale red colour, an expressive nose of red currants, smoky and peat flavours on the palate, this Pinot offers lightness and delicate fruits.
